Such an amazing story of which I can feel the same. We finally retired and sold our business after 30 years working between 80-100 hours a week. We just purchased our new to us Casita as well. We wanted small because we have no intention of sitting in Casper. We wanted small to enjoy the outdoors and we also bring our two Havanese Dezi and Sasha! Looking forward to your recipes. I can help you with that! The brand is Kettle & Fire. If you Google it along with ginger turmeric, it should bring up a location near you where you can purchase it. I like using it in a lot of different dishes when I something quick and easy to add extra flavor.
Only place we can get it here in Canada is Real Canadian superstore when we get to Ottawa. Just got off the ferry from Newfoundland and Labrador should be able to make that dish in a couple of weeks.
Thinking about how our Casita travels have been since we left Florida mid May. The weather we have experienced here in Canada was not conducive to outdoor relaxing or cooking. It’s been very cold, extreme winds and rain. So we had to cook inside. Our 2025 has that new marine carpet so it does not absorb odors as much. Leaving the fantastic fan open and running does remove odors.
Anyway, would LOVE some easy recipes to make for healthy eating in the casita or outside the casita when possible. Anytime you feel inspired, leave a recipe at the end of each blog. ❤️
