Love this recipe. We travel in a Casita as well. Can you explain how to make cornbread on a stovetop?

You're going to laugh, but we used a box mix! We greased the cast iron Dutch oven, added the batter, placed it on the camp stove covered on medium heat for a few minutes, then turned it down way low. It stuck a little so I let it cool a bit covered, so it would steam a little. We didn't have flour, but if we had I would have greased AND floured and that would probably have solved the problem. I'm planning to try again with baking spray. I've never used that product cuz I'm stubborn, but trying to be more open minded LOL.

OK, thinking I might need a dutch oven! Where in the heck in our little casita am I going to keep that. Thanks for excellent reply.

We keep a Dutch oven and ninja possible cooker under the dinette seat, and a Coleman camp stove with cast iron grill and griddle plate under the bed. That's it.
